Sunday - Chicken pot pie - The Weight Watchers recipe that I linked to last week was put into use again. We had some of the ingredients leftover, and this one takes a while to prep, so we made it on Sunday. It was just as good as the one we had last week!
Monday - White chicken chili - I had the seasoning packet, and am using the recipe off the back of the packet. This is fairly easy and really good.
Tuesday - Salad! It's supposed to be in the mid-60s this day, and I thought salads would be a great meal. (The salad for Tuesday is lettuce, grape tomatoes, dried cranberries, sliced almonds, a little cheese and topped with a balsamic vinaigrette dressing. The recipe for the dressing is posted here and it's from the Tupelo Honey cookbook.)
Wednesday - soup/sandwiches. I needed something quick, and soup was on sale this past weekend, so I stocked up.
Thursday - Regular chili
Friday - homemade pizza. I'm going to try to make pizza dough in the breadmaker. The bread I made Friday was pretty good. Using the machine twice in a week will be a record (considering my first time using it was last Friday.)
Saturday - Open (I really can't remember what I have written on the list right now, but we will probably have leftovers or go out.)
I stocked up on chicken this weekend. Earth Fare had a coupon (I received it in my email last week) for chicken - $2.99/pound for organic, hormone-free chicken breasts. I bought several pounds of it, cut it into pieces that are easy for us to cook and use, and froze it.
Even with the abundance of chicken on this week's grocery list, I managed to get everything for under $85. I tried to shop the sales and used several coupons. Grocery prices seem to constantly be rising, and it's the one place I'm trying to keep under $100 each week. I try to buy more organic, healthier options, which causes our total bill to rise. (At the same time, I know a lot of people go over that amount in one week - healthier options can definitely be much more expensive!)

ReplyDeleteI made homemade pizza with breadmachine dough tonight. It was so hard to stop at 3 pieces, but I'm glad I did because I'm completely stuffed.
